What is Panipuri (Ragda Panipuri)?
Panipuri — known as gol gappe in Delhi and puchka in Kolkata — is India's most-loved street snack. In Mumbai it's served as Ragda Panipuri: each puri is filled with warm ragda (a curry of white peas), a spoon of sweet tamarind chutney, then dunked into cold spicy pani flavoured with mint, coriander, cumin and green chilli.
You eat it standing up, one after another, until the bhaiya cuts you off.
