What is Dabeli?
Dabeli was invented in the town of Mandvi in Kutch, Gujarat, in the 1960s and spread to Mumbai where it became a beloved street sandwich. The name comes from dabaana — to press. The masala is a distinctive blend of coriander, cumin, chilli, dry mango and other spices, mixed into mashed potato with tamarind-date chutney and garlic chutney, then loaded into a buttered pav with pomegranate arils, peanuts and sev.
